Product description

Smoked in-House Over Beech Wood
Cut from the belly of the pig, our streaky bacon is dry-cured to our own recipe, which helps it cook with minimal shrinkage and crisp up beautifully in the pan. Smoked in-house over beech wood using traditional methods, it has a gentle smoky character and a good balance of fat and lean meat. Equally good at breakfast, layered into sandwiches or used to bring extra flavour to soups, stews and braised dishes, it’s a long-standing favourite amongst our chef community.

Background

Native Breed Pork and Traditional Curing
At Swaledale Butchers, we make proper bacon using traditional methods and the same premium whole cuts of belly, back, loin and shoulder that we sell fresh. Using these better cuts, rather than lower-grade trim, gives the finished bacon its generous texture, clean flavour and excellent cooking quality. Our native breed pigs, including Tamworth, are particularly well suited to bacon, producing meat with depth of flavour and the right balance of fat for crisping, frying and grilling.

Reared outdoors, our pigs are free to root, wallow and express their natural behaviours, which we believe is fundamental to both welfare and flavour. Dry-cured to our own recipe and smoked in-house over beech wood, this streaky bacon is a long-standing favourite amongst our chef community and a proper staple to keep in the fridge.

As with all Swaledale meat, this dry-cured smoked streaky bacon is Always Fresh, Never Frozen®, butchered to order, vacuum-packed and shipped in recyclable packaging to arrive safely insulated and ready to enjoy.
